What’s the poop on Kopi Luwak?

civet and picked coffeeKopi Luwak, the rarest drink in the world is from the excrements of an animal called the Palm Civet. This meerkat/raccoon looking creature happily frolics in the tropical regions of the Indonesian Island of Sumatra. As they play in the coffee trees they feast on their favorite snack of only the ripest, sweetest coffee cherries. After ingesting the entire fruit, beans and all, the coffee beans ferment in this little creature’s stomach and develop a complex, distinct flavor.

The beans are then collected from the animal’s feces, cleaned, roasted, and ground like regular coffee.  They then go through a light roasting process to ensure the delicate flavor is preserved and the coffee does not become bitter. The resulting cup of coffee is said to be absolutely incredible and sells in the USA from $100-$600 a pound. It has been said that the coffee has a full body taste with a syrupy viscous quality containing notes of chocolate, and a clean aftertaste. Some coffee houses have done tastings of this rare drink and sell each cup for about $10. Check online to see if there is a local Kopi Luwak cupping experience near you!
